The Mitchelin guide... ish...

Nigerian restaurants are called chop houses – these can range from tiny wooden structures with a plastic table or two to larger establishments with tablecloths and menus.

Rule 1: don’t bother reading the menu. This is merely a decorative feature. Most Nigerian eateries have long, impressive and entirely misleading menus. Reading it will just get your hopes up.
Rule 2: ask the waiter what food is available today. Don’t be disheartened if your desired dish is not mentioned. Just ask for it specifically. The waiter simply didn’t want to waste your time by mentioning all of the food that is available today.
Rule 3: keep it simple – ordering complicated dishes (such as anything vegetarian) will just throw the entire exercise into disarray and may result in nobody at the table getting what they ordered. Order one thing at a time – trying to order drinks along with your food is foolhardy. The time for ordering drinks will come.
Rule 4: be prepared to wait. And wait.
Rule 5: start to eat as soon as your food arrives. Your companions may be waiting for their food for some time. This is also true of elements of your meal – if you order chicken and chips and the chicken arrives first, just eat it. The chips are probably still potatoes.
Rule 6: enjoy it – Nigerian food is very very tasty and sooo worth the wait.
